I made my target morphs by using the separated head, I made a copy of it to use as a template and then added a morpher modifier to the original. Now, using the template, I made another copy and named it "A, I". With the copy I opened the mouth to make it seem like it was making an A or I sound. Once this was done I went back to the original head and by right clicking on an empty channel from the channel list I clicked "pick from scene" and then selected the face with it's mouth open. I could then drag the slider up and down to make the original head pull the face I created. I then proceeded to do this for some other facial expressions.
I didn't make many facial expressions as I didn't need that many but I can easily go back and add more later if need be.

When it came to reattaching I found a number of different ways that people do it but after an hour or so of trying things only to find out that the morpher modifier had vanished. I tried creating a skin modifier but I'd have to get the envelopes 100% synced up with the body's envelopes so instead, after frantically clicking around in hopes of stumbling upon something that could help, I noticed you could copy and paste modifiers... So I just copied and pasted the body's skin modifier onto the head and it worked a treat, no tearing or anything, it looked as if the head was actually attached.
Next I got started on animating, the part I had been waiting for for the whole of the project.
